This
white table wine is called after the name of the vineyard as
recorded in the old maps of the local land register. On this
soil grows Sauvignon Blanc, a noble grape variety planted the
world over, which, thanks to the microclimate of Ziano and of
this area in particular, produces wines of considerable character.
The grapes, hand-picked during the first ten days of September,
undergo a soft pressing. Part of the juice ferments in stainless
steel vats and part of it in new barrels made of French oak
from Allier (barriques holding 225 litres) where it stays
for nine months. The wine is then aged in bottle before it can
be sold.
Our modern winemaking techniques, in particular
an accurate temperature control, enable us to produce a white
wine of great character with a complex bouquet of unfailing
interest.
